Restaurant Blauw occupies a stretch of Amstelveenseweg in Amsterdam Oud-Zuid, within walking distance of the southern exits of the Vondelpark. The dining room departs from the woven bamboo and shadow puppet decor that many Indonesian restaurants in the Netherlands still use. The space is spare and contemporary, built around a deep red wall, and food arrives in plain modern ceramics rather than on the tiered warming stands associated with older rijsttafel houses.

The kitchen is led by Hendra Subandrio, who cooks from family recipes the restaurant traces back at least two generations, and who travels to Indonesia to gather new material for the menu. The rijsttafel is the format most guests come for. Originally a colonial era Dutch arrangement in which many small Indonesian dishes are set out at once around rice, it is offered here in three versions, one built around meat, one around fish, and one entirely vegetarian. Each is served for a minimum of two people.

Several individual plates are worth knowing before ordering. Tahu peteh, fried tofu cooked with peteh beans and chilli, is the dish most closely associated with Subandrio. Daging rendang follows the slow braised West Sumatran method, with beef cooked down in coconut milk and spice paste until almost no liquid remains. Goat satay is grilled over open flame, and gulai domba is a lamb curry in a spiced coconut sauce. Meals open with a sambal made in house and served as an amuse.

The business extends beyond the dining room. Blauw bottles a gin infused with seven Indonesian spices, sells its sambals for use at home, and has published a Dutch language cookbook collecting seventy of its dishes. A second branch operates in Utrecht under the same name and with the same menu, and is listed separately in this directory. Takeaway is available from both kitchens, and the Utrecht location also delivers through the main Dutch delivery platforms.
