Inside One&Only One Za'abeel, a luxury hotel in Dubai's Za'abeel district, Andaliman opened in early 2024 as an Indonesian restaurant built around tableside theater as much as the food itself. The name comes from the andaliman pepper, a citrusy, numbing spice used in Batak cooking from North Sumatra, and the restaurant leans into that idea of bold, hands-on flavor with its signature feature: a mobile sambal trolley that is wheeled to each table, where diners choose their preferred spice level and watch the chili paste being ground and mixed in front of them. Coverage of the opening described it as the first Indonesian restaurant in Dubai to build its kitchen around an open format, letting guests watch dishes being prepared rather than see only the finished plate.

The restaurant's interior design draws directly on the Indonesian archipelago, incorporating rope trellis work, teak furniture, and carved detailing meant to evoke the region without copying any single island's style too literally. The concept was developed by Gianluigi Gerosa, food and beverage consultant for Kerzner Global, the hospitality group behind the One&Only brand. The menu moves between familiar starters, such as asinan pindang, a tangy pickled fish salad, and heartier mains, including beef rendang, a slow-cooked spiced beef dish, and sop buntut, an oxtail soup. A slow-roasted duck dish, cooked for 24 hours, is presented as one of the kitchen's centerpiece preparations. The restaurant has also been described as family-friendly, a notable positioning for a restaurant inside a five-star hotel property.

Andaliman is located on Level 4 of the hotel at Za'abeel 1, Dubai, and serves lunch daily from 12:00 to 16:00 and dinner daily from 18:00 to 23:00. Reservations can be made by phone, and the restaurant's placement inside one of Dubai's newer luxury hotel developments puts it within the Za'abeel area near the Dubai Frame and the Zabeel Park district.
