About Sambal
Sambal began not as a restaurant but as a pandemic-era pop-up, started by Maureen Usman, an immigration lawyer, and Jasson Wijaya, a graphic designer, who began cooking together as a way of staying connected to their Indonesian heritage during a period when travel and in-person gatherings were largely unavailable. What started as home cooking shared informally grew into an online catering operation, and from there into a recurring pop-up at Toronto's Square One shopping center, which ran from 2021 to 2023 before the pair paused it to search for a permanent space.
That search led to a location on the Danforth, in Toronto's Riverdale neighborhood, near Chester subway station, where Sambal now operates as a full restaurant. The kitchen is led by executive chef Andrea Santawirya, and the menu centers on handcrafted sambal, the chili-based condiment for which the restaurant is named, alongside dishes such as nasi goreng, satay, bakso bakar, or grilled meatballs, and iga bakar, a large grilled beef rib dish glazed with soy sauce. The restaurant also serves a beef rendang dish featuring slow-braised Angus beef alongside jasmine rice, a hard-boiled egg, prawn crackers, and green sambal.
